(Belated) Seed Swap 2020 Flavor!

Well hey, hey, hey there, friends. How are you holding up? How are you navigating this strange year? We hope you're finding small ways to squeeze joy out of this beautiful spring air we've been gifted as of late. In a socially responsible way (of course). One thing we look forward to every March is the Spearfish Seed Swap-- those cool-as-all-get-out farmers at Cycle Farm let us design a seeeedy flavor to commemorate the event each year! Unfortunately the physical event at the library was called off this year. BUT. We still got down and seedy for you (Okay, yes we know it's May. And yes, we're a little late to the game. Forgive us.). We're still so dang excited for you to try the newest inductee to the Official Spearfish Seed Swap Ice Cream Catalogue, so without further ado...

Buckwheat Brittle with Tahini-Honey Swirl!

Let's break it down together. Yes? Yes. After churning up ice cream with delicate hints of vanilla and cardamom, we swirled in a dreamy mix of tahini (props to the almighty sesame seed!) and honey (shout out to our favorite Sunrise Hives!), then tossed in crunchy bits of homemade buckwheat brittle.

Buckwheat, hmm? A seed-- yes, a seed! Color us newly informed. Buckwheat is one of the COOLEST kids on the garden block. Not only is it gluten-free and rich in protein, but it also outcompetes weeds and provides an excellent food source for pollinating insects! (Ohhh pollinators, a lifetime standing ovation for them, amiright?). We were so unbelievably stoked to utilize this nutty grain-but-not-actually-a-grain, and can't wait for you to dig in. Seeds are just the coolest (and they're gonna keep on doing their thing in the midst of this pandemic). Oh, and we'd be remiss not to mention our extreme gratitude for all of our local farmers and producers. The bee's knees doesn't even come close to describing 'em. Lots of big, socially distant bear hugs your way!
